Easy Zucchini Fritters

So fresh and so easy! Our Director of Health & Wellness, Carmel Baronoff has a perfect summertime snack or side dish that only takes a half-hour to make.

Learn how to make Easy Zucchini Fritters:

  1. Heat a large skillet over medium heat and add onion and garlic. Sauté for 3-4 minutes, then add zucchini and sauté for another 2 minutes. Add greens and leave on heat until wilted, then set mixture aside.

  2. Prepare chickpea “eggs” by combining chickpea flour and water, and stirring to a runny paste consistency. Set aside. 

  3. In a large bowl, combine sautéed veggies, quinoa, salt and dill, and stir until combined. Add chickpea mixture and stir. Add gluten free flour and stir. The mixture should be slightly tacky but moldable.

  4. Heat a large rimmed skillet over medium heat with a little oil, enough to coat the bottom of the pan, and form mixture into 1/4-inch-thick patties. Pan fry patties for about 4 minutes on each side or until golden brown. 

  5. Serve with garnishes of choice and enjoy!
