Chocolate Turtles


6 ounces 100% cacao
Unsweetened baking
chocolate, melted
2 tablespoons maple
½ teaspoon vanilla extract
1 cup pecan halves toasted
½ cup Vegan Caramel, cold

  1. In a medium bowl, whisk together the melted cacao, maple syrup, and vanilla.
  2. On sheet of parchment paper, create little mounds of 5 pecans, arranging them to look like the legs of a turtle with a little head poking out. Top each cluster with a tablespoon of cold vegan caramel. Pour the melted cacao over each turtle; letting the pecans (i.e. the legs) stick out a bit.
  3. Let the turtles set for at least 30 minutes, until the chocolate is completely hardened. This can be sped up by putting the turtles in the fridge or freezer. Store in a sealed container in the fridge for up to 1 month.
